How to make the ultimate working from home salad

We asked Eleanor Warder, co-founder of healthy restaurant Atis, to talk us through her dream Working From Home lunch. Here’s what you need to make the Atis Azteca salad bowl:

  • Chopped romaine
  • Baby spinach
  • Black beans
  • Sweetcorn
  • Avocado
  • Feta
  • Baked chipotle tortilla chips
  • Pickled red onion
  • Lime coriander dressing

For my healthy lunch recommendation I’m going to tell you how to recreate one of our bowls at home. Everyone has different nutritional and dietary needs – these days more so than ever – and at Atis we feel the best way to get people to eat better and more sustainably is through a predominantly plant-powered lifestyle without completely cutting out food groups.

This bowl is a great salad that’s nutritious and delicious. It’s a great option for lunch – even more so for those now hitting the restaurants in the evenings to make up for the past year and are keen to stay balanced through the week.

The Azteca is a great example of a well-rounded, wholesome lunch. The black beans are slow releasing carbs, so that they will keep you fuller for longer. They are also a great source of protein. The avocado is a great source of what are known as ‘healthy’ fats (monounsaturated and polyunsaturated fats) that are essential for hormone function, memory, are a great source of energy and help you absorb specific nutrients. It is also a bowl that is full of colour. You often hear people say ‘eat the rainbow’ – and whilst this is a bit of a cliche, it is a helpful visual guide to make sure you are fulfilling all your mineral and vitamin needs.

If you’re squeezed for time you could instead try another great, wholesome lunch that’s become a staple in our house: toasted pumpkin rye bread, olive oil, two soft boiled eggs, half an avocado, rocket and baby spinach mix piled on top, chopped up herbs (whatever you have in the fridge) and a drizzle of apple cider vinaigrette. It’s delicious and will keep you going until dinner.
