Cigar leaf caramel
Young is famed for his caramel and here he pairs it with a heavy, spicy cigar leaf.

Goats cheese, lemon and rosemary
The goats cheese adds a creamy zip that works brilliantly with the citrus.

Ginger pig black pudding with cider truffle
Another creation that comes from the left-field but is surprisingly tasty.
